Sourdough isn’t just a bread — it’s a legacy. It’s a testament to resilience, tradition, and the wild-hearted spirit of California’s pioneers. At Bob’s Oven Bakery, we don’t just make sourdough. We carry forward a story that began nearly two centuries ago — right here in the Golden State. The Original Bread of the Gold Rush.

In the mid-1800s, thousands of hopeful fortune-seekers flooded into California during the Gold Rush, each chasing dreams of wealth. But striking gold was never guaranteed — so they learned to rely on something much more consistent: sourdough bread. With no access to commercial yeast in the rugged wilderness, these miners carried with them small crocks of starter — a living culture of wild yeast and lactobacilli. This magic mixture allowed them to bake fresh bread anywhere, anytime — even in the remote highlands and mining camps. These prospectors came to be affectionately known as “Sourdoughs” — a name that stuck as a badge of grit and self-reliance.
The starter was prized like gold itself, passed from one miner to another, kept warm through freezing nights, and protected like a family heirloom. Some starters are rumored to have survived for generations — and it’s this tradition that lives on in every loaf we bake.

Mount Shasta: Bread’s Natural Companion
Mount Shasta played its own role in this story. As a towering sentinel along the path of countless travelers, it was more than just a landmark — it was a hub, a resting place, and a source of the pristine water that would become a crucial ingredient in great sourdough.
Today, we honor that connection by using pure Mount Shasta water in our starter and doughs — just as the "Sourdoughs" did around 1850!

Long before Bob’s Oven Bakery was born, Dolores Wilson, Bob’s beloved late wife, was already nurturing her own sourdough culture in the family refrigerator. Friends and neighbors knew her as a generous soul who always had a crock of starter to share.
Her passion for sourdough — for its care, its science, its personality — became a family tradition. Today, that same spirit infuses our starter, connecting a local family story to a much larger one.
Starter: The Soul of Our Bread
A natural starter is a living, breathing organism — a symphony of wild yeast and beneficial bacteria that develop flavor slowly over time. Unlike the one-note speed of commercial yeast, sourdough starter builds depth, creating:
A tangy, complex flavor
A naturally long shelf life
A crisp, blistered crust and airy crumb
Better digestibility for many bread lovers
Our starter is hand-fed daily, nurtured like a pet, and refreshed using Mount Shasta’s mineral-rich water. It is this careful tending that gives our sourdough its unmistakable taste and integrity.
